1 or 2 whole chickens
fresh or dry sage ( I only had dry)
Rosemary if you like it ( I don’t)

SO EASY!!! ~
Turn oven on to 400 ~
Roughly chop all your veggies and set into your baking dish. Add 1-2 Tbsp olive oil and mix well-
Briefly heat 2 Tbsp of olive oil until just mixable) and mix in 2 garlic cloves minced, 1 tsp sage and pepper. This will form a paste when mixed. Rub the paste all over the chicken. Then sprinkle with 1 tsp paprika and salt.
Put in oven for 15 minutes at 400 , then decrease temp to 350 for the remainder of cooking. Should take about 1.5 hours to cook.
~ use the leftovers for fajitas or stir- fry … there should be enough for another meal. ~ then use bones to make a bone broth for soup!!!
